Pizzaiolo was born from a deep passion for authentic Italian pizza and a commitment to bringing that tradition to Canada. Our story begins in 2008 when our founder, after years of training in Naples, decided to create a pizza experience that honored Italian heritage while embracing Canadian ingredients and communities.

What started as a single location in Toronto quickly grew into a beloved brand across Canada, as pizza lovers discovered the difference that naturally leavened dough, never-frozen ingredients, and traditional wood-fired ovens make.

At Pizzaiolo, we believe that great pizza requires time, skill, and the finest ingredients. That's why our dough ferments for 48 hours, developing complex flavors and perfect texture. It's why we train each pizzaiolo (pizza maker) in traditional techniques, and why we source our ingredients from local farms whenever possible.
